So my latest recipe is a very simple and easy pasta dish, using orzo pasta.
Feel free to adjust the recipe adding any herbs or vegetables you please! This is just a very basic recipe you can chop and change to suit you,
1tbs coconut oil
1 Onion, chopped
1 Lemon, squeezed
1 Cup of Orzo pasta
1 or 2 cloves of garlic, chopped
4tbs of nutritional yeast
1 or 2 leeks depending on size, chopped
sprinkling of sunflower seeds
Firstly fill a medium sized pan with water and place on the stove until boiled, then add the pasta and if you wish a pinch of salt. Whilst this is cooking put the coconut oil in a frying pan until it melts then add the onions. Once the onions begin to sweat add the leeks and garlic and cook until soft. Add the lemon juice onto the vegetables and stir. Once the pasta is cooked, drain then put back in the pan and tip the cooked vegetables on top, along with the nutritional yeast and sunflower seeds, stir until combined and serve.
