Avocado Pasta and some exciting news!

Dear Readers,

Yesterday I cooked up a delicious avocado pasta dish which was super easy to make and 100% plant-based of course! I have made it before but I tweaked the recipe this time and was pleasantly surprised with the results.

Here is what you need…

Serves 1-2 PeopleIMG_1191.jpg

1 Avocado

1 Garlic clove

5 or 6 Basil Leaves (add to taste)

1 Tbsp Soya Yogurt

1/2 Lemon (juiced)


Organic wholegrain fusilli


Blend all the ingredients apart from the Pasta. Once the pasta is cooked, drain and stir in the avocado sauce to warm and then serve.

As for my exciting news, I have officially booked to begin travelling as of next Thursday (16th March)! I cant wait to post all about my journey which starts in Dubai, followed by southeast Asia. Then onto volunteering in Bali where I will spend my time teaching children about the environment after which I’m heading to Singapore and Malaysia 🙂

Vegan cooked breakfast

Dear Readers,

At the weekend I cooked me and my boyfriend my personal take on an english cooked breakfast….vegan style, Its the perfect weekend brunch dish!


Here is what I chose to include;

2 Vegan Linda Mccartney sausages

1/2 Avocado

1/2 tin Baked Beans

Fried potatoes (use around 3-4 small potatoes per person, slice thinly, lay in a frying pan with small amount of oil and fry until turning crisp and golden brown)

1-2 Slices of toast with vegan butter

I would also include grilled cherry tomatoes or mushrooms but I didn’t have any when I made this dish last.

Who said vegan food is boring? 😀

Kale & Avocado salad

Dear Readers,

This salad is super healthy but most importantly equally delicio14331658_10202199395864105_1288486512_n.jpgus and easy to make,

All you need is;

3 Cups Kale

1/2 Broccoli head

1/2 can chickpeas

1 Garlic clove

2 Tsp coconut oil

1 Avocado

1/4 Cup sunflower seeds

1/2 lemon (Juice)


Dice the clove of garlic and prepare the broccoli heads. Steam the Broccoli and Kale in separate saucepans, meanwhile fry the chickpeas in the oil and garlic until they begin to brown. Remove from the heat and put in a serving bowl along with the avocado. Then once cooked drain the kale and broccoli and combine along with the lemon juice. Finally sprinkle the sunflower seeds on top.

I promise you won’t regret giving this salad a go! Its packed full of nutrients and doesn’t harm a single animal, what more could you want? 🙂

Avocado, Chickpea and lettuce wrap

Dear readers,

Another wrap recipe perfect for on the go lunches or anytime you fancy!

Here is what you need…


-1 avocado

-2 or 3 lettuce leaves

-1/4 of a cup of chickpeas

-Lemon juice

-1 plain wrap

To assemble just mush the avocado into a paste and spread over the wrap, then lay the lettuce leaves and chickpeas on left hand side of the wrap. Squeeze lemon juice over the entire wrap and then roll from the left hand side. Cut diagonally in the centre and fold the ends in.

Its that easy 🙂

Kale, Chickpea and Red pepper roast

Dear Readers,

Another favourite meal of mine is this combination of roasted veggies and chickpeas, if I’m looking for simple, nutritious and of course quick washing up since it only using one baking tray and thats all 🙂 IMG_4947

Here are the ingredients;

-1tbsp Coconut oil

-1/2 Red Pepper chopped

-Chickpeas 1/2 cup

-1 Leek sliced

-3 Handfuls of kale

-1 Avocado

-Lemon juice to squeeze on top


Melt the coconut oil in the tray add the chopped leeks and red pepper cook for around 10-15 mins, then add chickpeas and kale, cook for a further 5-10 mins depending on how crispy you want your kale to be. Then add the avocado and squeeze of lemon.

You can add or substitute most veggies depending on what you like or have at home,

Falafel Wrap

Dear Readers,

Another of my favourite quick lunches to make when I’m on the go is this falafel wrap. Its so easy and seriously good 🙂 You must give it a try…..


Here is the recipe;

1 wrap

1tbs Hummus (more or less depending on size of your wrap and personal preference)

1 or 2 Falafel Balls (I bought mine from a supermarket but they are easy to make yourself)

2 Lettuce leaves

3 cherry tomatoes chopped

Cucumber (as much as you want) diced or sliced

Optional squeeze of lemon juice


Spread hummus on wrap, break up falafel balls into small pieces and place on edge of wrap, next to it in lines, lay out the other ingredients, apart from the lettuce which you can lay over the top of the rest. Then squeeze the lemon juice and roll up the rap starting from the side. Slice diagonally in the middle of the wrap and tuck in the sides. Done! Yes it is that simple!

Super quick Avocado, Tomato and Hummus wrap

This is my first of many recipes I’m going to share with you all, I love this recipe because its quick, simple and delicious and 100% vegan of course! Its perfect for an on the go lunch, so here it is;

1 wrap

2tbs hummusthumb_IMG_1828_1024

1/2 an avacado

1 handful of cherry tomatoes

1/2 Lemon (Juice of)

sprinkling of nutritional yeast (optional)

1 small gem lettuce or 2 handfuls of kale

(for variety I sometimes like to use kale instead of lettuce, both taste equally good!)

Spread the hummus on the wrap then assemble the avocado, tomatoes and lettuce/kale, drizzle the lemon juice over  and add nutritional yeast, fold the warp and your good to go! Enjoy!
